Cinnamon Mint Tea
As seen on the Sonoran Living program.

This tea is so refreshing! It can be made with fresh mint (spearmint) or dried mint, or a combination thereof.
Both the cinnamon and the mint are good for the digestion. The mint is cooling to the body and the cinnamon is warming, together they excite the internals and gently energize. This is a nice balancing tea.

Ingredients:
This will make about 60 oz, a large pitcher. Served iced garnished with fresh mint, orange slices and/or a cinnamon stick. Always use filtered water when making a beverage. It will not only taste better, but it will be better for you as well.
50–60 oz filtered water
¼ cup cinnamon chips (or 4 - 5 three inch sticks broken up a bit)
4 cups fresh spearmint leaves with small stems, cleaned ( use the top 4-5 inches of your plants, stem and all)
OR IF USING DRIED: ½ cup dried spearmint leaves (or ¼ cup dried and 2 cups fresh)
3 tea bags, either black tea or use the Celestial Seasonings Herbal Caffeine-Free Tea (in big green box)
3 Tbl honey
  orange slices

Method:
Bring 4-5 cups (32-40 oz) of water to just below boiling. Add cinnamon, mint and tea bags. If using a French press, put all ingredients in the flask and then pour in the water. If you are using a big pot, add your herbs to the hot water. Either way, cover to help keep the aromatic steam in. Let steep for 20 –30 minutes.
After steeping, strain tea into a large pitcher. Add an additional 2-3 cups of water, to desired strength. Add honey while tea is still warm. (Honey is the best sweetener for this tea, but if you want to substitute for another sweetener, use stevia.)
Serve iced with fresh orange slices. Enjoy!
